OTOKO is hiring for a Line Cook
OTOKO is a 12-seat Japanese restaurant located at South Congress Hotel in Austin, Texas. The multi-course omakase experience at OTOKO blends Tokyo-style sushi and Kyoto-style kaiseki into a unique tasting menu, selected and prepared by our chefs based on ingredient availability and seasonality.
JOB SUMMARY
A line cook is responsible for preparing and cooking dishes promptly and consistently, adhering to the outlet’s recipes and standard operating procedures while maintaining health department standards.
ESSENTIAL FUNCTIONS + RESPONSIBILITIES

Adhere to all standards of operations, policies and procedures, manuals, training material, memos, and verbal instruction

Inspect food preparation and serving areas to ensure safe, sanitary food-handling practices

Prepare, season, and cook dishes promptly and consistently, adhering to the outlet’s recipes and procedures
-
See to each guest’s special needs, including any noted allergies or dietary restrictions
-
Ensure the cleanliness and proper sanitization of work areas, equipment, utensils, dishes, and silverware
-
Store food in designated containers and storage areas to prevent spoilage
-
Carry food supplies, equipment, and utensils to and from storage and work areas
-
Assist in the restocking and replenishing of supplies
-
Observe and test food to determine if it has been cooked sufficiently, using methods such as tasting, temperature checks or piercing them with utensils
-
Weigh, measure, and mix ingredients according to recipes, using various kitchen utensils and equipment
-
Portion, arrange and garnish food
-
Regulate temperature of ovens, broilers, grills, and roasters
-
Estimate expected food consumption, requisition or purchase supplies, or procure food from storage as directed
-
Assist in the development and implementation of special projects
-
Maintain a positive relationship with all employees and guests
-
Ensure immediate response is given to guest comments and concerns; inform immediate supervisor and apply corrective measures when necessary

Ensure open lines of communication with all departments and upper management at all times via email, logbooks, meetings, etc., to ensure all needs of the outlet are met
-
Maintain a high level of cleanliness, sanitation, and safety in the work area
-
Ensure that all equipment is maintained in good, safe working condition
-
Maintain an increased awareness of safety issues throughout the property
-
Keep abreast of safety and emergency procedures and OSHA requirements

Attend relevant meetings as directed
