Overview: Bread Production Manager
We are seeking a skilled and experienced Production Bread Manager to oversee and coordinate the planning, organization, training, and leadership of our bread production team. This role is crucial in achieving our goals related to sales, costs, employee retention, customer service, food quality, cleanliness, and sanitation.
Key Responsibilities:
- Team Leadership: Direct and manage the bread production staff to meet organizational objectives.
- Bread Expertise: Display a strong passion for bread, including an understanding of bread-baking techniques, grains, flours, and fermentation.
- Production Oversight: Adjust menu items, formulas, and production schedules; supervise bread production.
- Hiring & Training: Participate in interviewing and hiring; oversee training for new bread bakers and maintain knowledge of all bakers' roles.
- Quality Maintenance: Ensure the quality of bread by staying current on mixing methods and guiding bakers.
- Inventory Management: Handle flour orders, maintain inventory, and ensure proper storage and labeling.
- Workstation Management: Maintain organized and clean workstations; oversee cleaning of production areas.
- Safety & Sanitation: Uphold safety and sanitation standards in accordance with state health codes and internal policies.
- Team Coordination: Foster a team-driven environment with strong problem-solving skills and professional relationships with co-workers and customers.
- Order Fulfillment: Track and ensure the fulfillment of bread department orders.
