Production Technician
Position Summary
Production Technicians assist with harvest, cellar, QC, and bottling operations in the
production of the highest quality wine/juice products. Production Technicians are responsible
for cleaning and maintaining the production equipment and spaces in accordance with
company standard operating procedures. Cleaning and sanitation is a top priority and are
daily functions of this role. Technicians perform work to wine and juice only when directed by
Work Orders signed by the Winemaker. Assist in other departments as directed by your
Supervisor. The responsibilities of the Production Technician include but are not limited to
those listed below.
Major Responsibilities:
Assist in daily Cellar Operations
Cleaning, sanitation, and maintenance of pumps/lines/valves/tanks/filters etc.
Management of headspace and Dissolved Oxygen as by the Winemaker
Racking, blending, filtering, and topping wine/juice
Prepare wine for bottling/bulk
Maintaining a clean, sanitary and organized cellar
Assist with Harvest and Crush Pad Operations as needed
Field sampling and grape handling
Cleaning, sanitation and maintenance of equipment/tanks/lines
Operation of crush pad equipment/pumps
Assist with Fermentation
Handling of juice to the specification of the winemaker
Culturing yeast and inoculation of juice
Additions of nutrients
Measuring brix as needed during fermentation
Maintain Records to ensure with compliance TTB, FDA, etc
Tank movement and sanitation logs
Tank volumes
Wine Inventory
Assist with General Winery Tasks as needed
Operation of forklifts
Assist on the bottling line
Pull bulk orders
Cleaning and general maintenance around campus
Physical Requirements:
Physically able to lift 55lbs, climb ladders, move hoses, push and clean filters and
pumps.
Able to work in hot/cold/wet environments. Extreme temperature changes, cold in
the cellar and hot on the crush pad.

Adaptable schedule as workload or harvest may require
Forklift certification training available and required
High School Diploma or equivalent
Basic oenology/food science course work is preferred but not required
Previous food/beverage experience preferred but not required
A desire to learn
