Overview: All-Movie Hotel you will be working in a unique setting with a focus on the film industry. It features 27 beautifully renovated luxury rooms as well as film production facilities. The All-Movie Hotel is the latest addition to The Family Coppola Hideaways which include hotels and resorts in Belize, Argentina, Guatemala, Italy. Each hideaway is known for reflecting local culture and nature and have been personally curated and crafted by Francis Ford Coppola and his family. Quality, authenticity, and pleasure are the pillars of the Coppola businesses.
Job Summary: Plan, prepare, and provide high quality service in all areas of food production. Maintain organization, cleanliness and sanitation of all food related work areas and equipment. Responsible for ordering, prep lists, consistency in recipes, cooking and plating.

Essential Duties and Responsibilities:
Food Preparation: (50%)
- Execute food production and follow daily preparation list, adjusting the list as necessary.
- Set up workstation with proper tools , equipment and supplies according to kitchen standards.
- Place food orders with approved vendors
- Check production schedule and daily parts. Ensure that daily production is organized, prioritized and on track.
- Be knowledgeable of safe food handling and preparation procedures.
- Adhere to all Health and Safety code standards.
- As food is prepared label and date food containers
- Constantly communicate with team members to ensure proper coordination as far as time and order specifications.
- Understand how to use, operate, and care for kitchen equipment.
- Knife skills and cooking terms essential
- Prepare food according to recipe and hotel specifications in a timely and efficient manner.
- Set up station according to menu needs and be set for service time
- Perform correct cooking techniques.
- Maintain portion control.
- Bring any problems or shortages to your manager’s attention.
- Always maintain an organized and clean work area. Observe good sanitation practices and safety procedures. Wear gloves when possible.
- Duties may include unpacking and stocking kitchen deliveries, as well as assigned cleaning duties.
- Inform management of any items/supplied needed for the day’s tasks as necessary.
- Rotate food items as necessary.
Kitchen Maintenance: (30%)
- Inspect the cleanliness and working conditions of all tools, equipment, and supplies.
- Assure that all kitchen work stations, and storage areas are kept clean, organized and in good working condition.
- Oversee that the cleaning schedule is followed, ensuring that all health and safety regulations are adhered to.
- Maintain knowledge of correct maintenance and use of equipment
- Maintain proper storage of all products as specified by health and sanitation codes.
- Return all food items in clean containers to proper storage areas.
- Clean food prep areas and workstations, walk-in and shelves, to include floors and mats when food preparation is done.
- Turn off all equipment when cooking is finished.
- Restock any dry goods, fresh products, cooking wines that you used in production in the appropriate areas as needed.
- Keep a complete inventory of Green Room utensils. Notify management of missing pieces.
Other (20%)
- Assist General Manager in forecasting product necessities and placing orders.
- Availability to prepare scheduled special meals upon guest’s request.
- Scheduling staff as needed.
- Dress appropriately in uniform for shifts.
Supervisory Responsibilities: This position has no direct supervisory responsibilities.
Job Requirements:
Education/Experience:
- High school diploma or equivalency required.
- Basic Pastry experience is a must.
- Minimum three (3) years cooking experience in a high-volume café/restaurant/catering facility.
- Supervision or over-sight of other BOH employees desired.
Knowledge, Skills & Abilities:
- Excellent verbal and written communication skills.
- Excellent interpersonal and customer service skills including dealing with difficult and rude patrons.
- Excellent organizational skills and attention to detail.
- Familiarity with local area with the ability to provide directions and maps to local attractions and destinations.
- Proficient with Microsoft Office Suite or related software.
