Technical Skills: People & Team Member Development:
- Compliance: Abides by and applies organization’s policies and expectations.
- Performance Management. Ensures that each BOH team member and leader is provided with regular feedback, including annual reviews.
- Coaches. Develops underperforming team members as needed and communicates relevant information to other leadership.
- Productivity. Coaching team members on processes, training and procedures to maximize efficiency.
- Works directly with the Operations Support Specialists to assist in scheduling team members.
- Labor Targets and Costs. Schedule appropriately and proactively manage labor according to the needs of the shift.
- Recognition. Uses positive reinforcement to celebrate team members and leaders.
- Systems. Uses Toast, CTUIT, and Dolce to assist in managing labor and communication.
- Provides formal and informal feedback to all levels through candid discussions
Technical Skills: Product:
- Proper food handling. Labeled, dated, covered, iced, drained, temp safe, etc.
- Knowledge and execution of proper fish cutting techniques
- Willingness to master all sushi rolling techniques
- Uphold all safety and sanitation guidelines for handling raw and cooked food
- HACCP. Full knowledge of the plan and how to execute if necessary.
- Quality. All recipes are followed according to specs in the recipe book including the use of measuring utensils; managing ticket times to ensure proper service standards.
- Quality Checking. Daily line checks, tasting and temping all stations for quality and addressing any issues immediately.
- Food notes. Share with all management and staff to guarantee transparent and proper communication.
- BEO’s. Should be able to read and use effectively.
Technical Skills: Product and Supply Ordering:
- Par Levels. Accurate on-hands and written par levels for every order. All orders should be submitted with consistent accuracy and in a timely manner.
- Receiving Orders. All orders are received, inspected, and stored properly to ensure standards are met.
- Product Management. We are never out of product; we are proactive in maintaining quality product and par.
- Collaboration. Partner with the Support Team to maintain efficient food ordering needs in order to maintain an authentic and relevant menu.
Technical Skills: Kitchen Cleanliness & Organization:
- Health Department Score. An excellent health department inspection score is maintained.
- Storage. Walk-in/Freezer/Dry Storage – Kept clean, labeled, organized.
- Cooking Areas. Should be sanitized, free of debris and trash, and organized.
- Loading Dock/ Backdoor. Should be maintained and kept clean at all times.
- Equipment. All equipment is kept in clean working order and immediately reported to the necessary person for any repairs.
- Interior Perimeter. Ceiling, walls, and floors are kept clean and dry at all times.
- Cleanliness of Self and Team. Uniform and appearance of self and team members are maintained.
Technical Skills: Food Cost Control Measures:
- Reduce Waste. Collaborate with the leadership team on reduction strategies; manage waste logs and track costs to share with the team.
- Equipment. Ensures that team members have the needed tools and equipment available to successfully execute their job responsibilities, which also includes managing the cost of the tools.

Core Qualifications
- 2 + years’ experience as Executive Chef / Kitchen Manager or similar sushi leadership role in high volume dining.
- Must have longevity (2 years + under the same restaurant / group).
- Corporate restaurant and independent restaurant experience preferred.
- Verifiable understanding of financial facets of business operations.
- Ability to follow recipes and directions to provide consistency with M Street’s brand pillars.
- Proven experience leading and developing a team, while consistently communicating value and building confidence.
- Bilingual Spanish speaking preferred.
- Must be able to lift and maneuver up to 50 pounds
- Open and receptive to feedback
